BBQ Sauce

A work in progress. Still refining it.

Barbecue Sauce

1 medium Spanish onion

5 cloves of garlic

1/2 inch of ginger

2 cups ketchup

1 cup water

1/2 cup apple cider vinegar

1/4 cup canola oil

1/4 cup Worcestershire sauce

1/4 cup fresh lemon juice

1/3 cup brown sugar

1 tablespoon honey

1 tablespoon chili powder

1 tablespoon ground cumin

1/2 teaspoon ground red chile pepper powder

1/2 teaspoon kosher salt

1/2 teaspoon fresh black pepper

Either pulse onion, garlic and ginger in electric chopper or mince all very fine. Sautee onion, garlic and ginger for 2 to 3 minutes. Combine all remaining ingredients and bring to a boil. Reduce heat and simmer 10 to 15 minutes until it thickens. Pour sauce through a strainer or use a hand blender to puree all together in the pan. Let cool to room temperature. Can refrigerate for about a week.
