Sprouted Beans

Recipe courtesy of my friend Ravi!

1/2 pound of sprouted Moong / Mung / Math beans

1 medium onion - diced fine

1/2 cup of onion diced fine (additional reserved)

1 tsp cumin & coriander powder

1/2 tsp ground red chili pepper powder

1/2 tsp turmeric

2 medium tomatoes - chopped

1/4 cup of water or vegetable broth

1 tsp lemon juice - fresh

2 tbsp cilantro - chopped

salt to taste

Sprout beans three to four days in advance. This can be done in a colander by rinsing and picking over dried beans very well then rinsing with lukewarm water two to three times daily -- cover with a moist towel or paper towels to prevent drying.

Saute onion, tomato and spices until onion turns translucent. Add bean sprouts and water or broth, turn heat to medium and cook for 5 or so minutes until tender crisp. Add fresh lemon juice, cilantro and reserved chopped onion just prior to serving.
