Hummus Recipes

Two Hummus Recipes - updated 9/3/07

Note 9/2/07. I have discovered that I like 1 to 2 tsp of onion powder much better than the onion in the recipe.

Hummus Recipe 1 -- my typical

4 cans of garbanzos drained and rinsed (I prefer Goya)

2 cans of black beans drained rinsed (I prefer Goya)

(or 3 and 3 or any combo you like -- or any color that you like! I mix them up.)

1 sm onion or 1 tsp onion powder

6 big cloves of garlic

3/4 cup extra virgin olive oil

1 tsp tahini (or sesame oil or sesame seeds if you prefer)

2 tsp kosher salt

1/2 tsp fresh ground pepper

1 1/2 tsp cumin

1/2 tsp coriander powder

1 tsp hot ground red chile pepper powder (e.g cayenne - but I prefer Indian red chile pepper powder)

1/4 cup lemon juice

In a food processor, I tend to puree all ingredients but beans first -- then add beans and puree until very smooth. Add more olive oil for consistency and salt, pepper, lemon juice and hot pepper to taste.

Hummus Recipe 2 (a bit more traditional and a smaller batch)

3 cans of garbanzo / chick peas - drained and rinsed (I prefer Goya)

1 small onion (or 1 tsp of onion powder)

4 big cloves of garlic

1/3 cup extra virgin olive oil

1 tsp sesame oil (can use tahini also or tahini only if you prefer and use 1 tsp or more)

2 T Lemon Juice

2 tsp kosher salt

1/2 tsp fresh ground pepper

1 1/2 tsp cumin

1 tsp hot ground red chile pepper powder (e.g. cayenne)

In a food processor, I tend to puree all ingredients but beans first -- then add beans and puree until very smooth. Add more olive oil for consistency and salt, pepper, lemon juice and hot pepper to taste.

I prefer Indian ground hot red chile powder over cayenne pepper -- but cayenne is fine. This is not chile powder -- just plain, dried, ground red chiles from the Indian grocery.
