Pressure Cooker Split Pea Soup
Ingredients:
4 T (1/2 stick) salted butter
1 T canola or vegetable oil
1 medium sweet onion, chopped fine
2 carrots, chopped fine
1 large potato, peeled and chopped fine
1 cup green split peas, rinsed
3 14 oz. cans chicken broth (3.5 cups)
1 clove garlic, minced
1 t ginger – grated (or 1/2 t dried & ground)
½ t turmeric
1 bay leaf
½ tsp of salt
1/2 tsp fresh ground pepper
Directions:
Rinse green split peas 3 times and then soak in water for 10 minutes.
In a 5-quart or larger pressure cooker, sauté butter, oil, garlic and onion for about 2 minutes. Add carrots, potato, split peas and broth. Stir to mix. Add ginger, bay leaf, turmeric, salt and pepper. Stir to mix. Close lid, seal and bring to high pressure. Adjust / lower heat to stabilize pressure and cooking temperature. Cook for 13 minutes on high pressure. Remove from heat and let cool naturally until the pressure comes down slowly. Puree if desired.
