Sweet Potato Casserole
Casserole:
4 large cooked and mashed sweet potatoes
1/3 cup packed brown sugar
1/3 cup cream or 1/2 & 1/2 1/4 cup maple syrup
4 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt 1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 cup all-purpose flour
2 eggs
1 teaspoon baking powder
Topping:
1/2 cup packed brown sugar
1/4 cup all-purpose flour
2 tablespoons butter
1 cup chopped pecans
Directions 1 Preheat the oven to 350 degrees F (175 degrees C). Coat one 3 quart baking dish with non-stick cooking spray or butter. 2 Combine the mashed sweet potatoes and other ingredients (not topping). Spoon mixture into the prepared baking dish. 3 Combine the 1/2 cup brown sugar, pecans and flour. Cut in the chilled 2 tablespoons butter until the mixture resembles coarse crumbs. Sprinkle over the sweet potato mixture. 4 Bake at 350 degrees F for 34 - 45 minutes.
