Black Bean Soup - Pressure Cooker

Vegan

I really like my pressure cooker. It can make yummy beans in minutes.

1 lb black dried black beans -- soaked at least 4 hours and rinsed

1 T olive oil

8 cloves garlic - chopped

1/2 tsp whole cumin seeds

1 bay leaf

4 or 5 dried red chilies or 1/2 tsp ground chili pepper powder

1 medium onion - chopped

2 carrots - chopped

2 stalks celery - chopped

1 tsp vegetable bullion (no msg)

1/2 t fresh-ground black pepper

2 t lemon juice

salt - to taste

Saute cumin seeds and dried red chilies in olive oil a few seconds then add onion and saute for 1 minute. Add garlic (and chili pepper powder now if no whole chilies used) and saute for 1 minute more. Add carrots, celery, beans, black pepper and vegetable bullion and stir to coat. Add enough water to cover by one inch as long as it is not too high in your pressure cooker. Pressure cook on high for 12 minutes, remove from heat and let it cool down naturally. Season with lemon juice and salt. Serve with or over rice.
